Very cool! The ones I grew this year were a green/purple variety.
I grew both yellow and purple tomatillos this year. Sadly, I have not used them yet. How did you make the salsa?
These are very popular at Quebec City farmers’ markets. That always struck me as strange.
last year I did two green plants and they really produced a lot and this year I did the green again and some green purple ones, not quite as prolific but not too bad… guess it’s time to add some yellows to the mix? I’m about to wash & freeze the ones I just picked for canning later …
I have never used yellow or purple tomatillas but have used yellow tomatoes and found that they have less flavor and inferior texture to red or purple. Since tomatillas and tomatoes are used in basically they same way I would use the yellow mostly to add color in a dish that combines several different types. I love the green tomatillas for pasta sauce so I assume any color might be used in this way as well.
